You know those days – when you’ve got nothing in the pantry but a bit of pasta, and the fridge is throwing up half-emptied jars of sundried tomatoes and a few sad olives. Maybe a tomato and a bit of garlic somewhere.
It was one of those days when I created this recipe but I liked it so much I’ve made it on purpose many times since. Sometimes I’ll buy a jar of capers and crave it so badly I can’t get home fast enough. Super easy to whip up for either a solo lunch or for a crowd (I’ve given measurements for two serves, adapt as you need). All you need is your pantry staples and a bit of imagination.
My standbys are usually sundried tomatoes, olives, capers, artichokes and garlic, but you do you, girlfriend/boyfriend.
Also I want to know what you’ve created on those Old Mother Hubbard bare cupboard days that actually turned out pretty good? Tbh it’s how most of my recipes are created haha
