Meatless Monday – Baked Sweet Potato Salad with Honey Mustard Dressing

I’m really mourning the loss of my good camera.Moving on.

As I mentioned recently, I have a hard time getting past the salad combination of pumpkin and haloumi.

Let’s just take a minute and really soak in the thought of that combination. Oh boy. Oh help. Oh yum.

Ok, so I thought I’d better broaden my horizons, and I really love big chunky salads in summer.  I had eaten a whole lot of junk one day and was so exhausted I could barely get off the couch. I needed a huge salad, full of good stuff. So I made this.

Ingredients
2 large sweet potatoes, peeled, cubed and baked
1 block feta
1 bag mixed lettuce
2 green onions, sliced
1 punnet grape tomatoes
1 handful fresh coriander

For the dressing:
1/4 cup red wine vinegar
just less than 1/4 cup olive oil
1 teaspoon wholegrain mustard
1 tablespoon maple syrup
salt and pepper

Directions:

For the salad: Mix.
For the dressing: um… mix.

    Oh this is great! What a beautiful salad. I'm currently meatless and would be all over this meme if my blog wasn't temporarily closed for business. Maybe I could facebook it?

    I eat a big salad pretty much every day and I'm trying to come up with new combinations.

    Yum! I'm all for the pumpkin-halloumi rut, but I find that any roasted veg go well.

    You have probably done this one, or a version of, but just in case here it is…..new potatoes, broccoli, green beans, goats cheese (or ricotta) with a lemon juice and olive oil dressing (chuck in some lemon zest if you are game) and top it all off with some toasted pine nuts. Yum!
