Fettuccine with rocket pesto and roasted cherry tomatoes

My rocket has been going crazy in the warmer weather, so I decided to make rocket pesto pasta, inspired by Ro’s here. I love his blog, Whole Larder Love, and his encouragement of us all to get out and grow our own food as much as we can.

Well I grew a whole lot o’ greens. And the biggest sin is when you don’t do anything with them.

I actually made two dishes here – the rocket pesto and a spinach and ricotta cannelloni, so spent a bit of time washing, drying and picking the leaves.

 

With mah helper, of course. And her buddies.
She hardly did a thing. Can’t get good help these days.
Anyhow, in a food processor, I threw in the rocket, a handful of parmesan-style cheese, a clove of garlic, a handful of random nuts (walnuts and cashews if I remember rightly), some salt and pepper, some marinated feta, and olive oil.
If I had measured the amounts I’d be a better food blogger.
And I whizzed* until done.
*Technical term.
Quality control.
And I cooked a little fresh pasta, roasted some cherry tomatoes and topped with extra marinated feta, sprinkling some of the oil over the pasta.
GOOD STUFF*.
*another technical term.
Anyway, go visit Ro, he’s much better at this than I am!

    yum! Im making this for dinner! We have been eating mestless meals 3-4 times a week and it feels great- lighter if that makes sense 😉

      Oh dude, totally. Without getting freaky, I noticed my digestion work so much better almost straight away. All that aside, this is an awesome meatless option and I’m totally not biased…

    In my opinion the besto pesto is without measure. Just whizz, taste, adjust, whizz, taste. It’s in touch cooking man. Chef-style!

      Gots to do the tasting! I agree, I don’t know how I got into food blogging when I rarely do anything by recipe. Sometimes I go along cooking talking to myself so I know how much to write down later!

    This sounds soooo good! I always think ” I should make pesto ” & then I never do! I’m on holidays after this week so I think I’ll give it a go 🙂

      Do it, then freeze it! Then you don’t have to worry about making it for months.

    I was so wondering what to cook tonight and you’ve totally inspired me. No rocket in the garden but a whole lotta basil, parsley and spring onions and with hubby working away for two days, I think I’ll take advantage of being able to go Vego and eat a lovely homemade pesto tonight (he hates basil….which is why I grow it of course!). Love your work Stacey!

      Haha! I would totally do the same. There’s nothing, NOTHING like homemade pesto. The bought versions don’t even come close! Can’t wait for my basil to regrow, I’m going to pesto myself stupid.
