This golden rice salad is a nice change from my usual bowl of brown rice, and is rather sunshiny now that it’s getting warmer again. The yellow is from turmeric, which is amazingly good for you, but doesn’t impart much of a flavour. Never fear, everything else makes up for it!
In this salad, I mixed cooked brown rice with roasted sweet potato cubes, steamed beans and broccoli (but they would be lovely roasted too) with a pinch of turmeric, salt and pepper. Add chopped parsley, feta, lemon juice, lemon zest, apple cider vinegar and a little flaxseed oil to taste, as a dressing. I like mine pretty lemony/acidic, but you do what you like. Topped with chopped almonds and walnuts (not pictured because I am a dick), it is a sweet, lemony, crunchy bowl of happy goodness. Why wouldn’t you want it for lunch?
Also had it with haloumi. You know that rocked my world.
