Hot damn do I love pastry. Funnily enough, not necessarily sweet pastries, but anything hot wrapped in flaky pastry that I can cover in sauce and I’m a happy lass.
Spinach and feta pastries are a veg staple the world over, and yes – can get boring pretty quick. I find a boost of lemon zest, chilli, and mint usually bumps me out of boredom, but you can find as many variations of spinach and cheese rolls as there are people! Everyone’s got their own secrets.
I tried these spinach and cheese rolls on my kids, both of whom tucked in heartily – the eldest slammed five and then two more in her lunchbox the next day (the first time I’ve seen her willingly eat spinach), and the second ate every single sesame seed off the top and most of the pastry.
Sometimes “getting the kids involved in the making of the food” doesn’t always translate in them eating it, haha! Oh man.

Description
These spinach and cheese rolls are super simple and awesome to have a stash of uncooked ones in the freezer for a quick lunch or Sunday night dinner where you are DONE. FOR. THE. WEEK. Bit of salad, bit of potato, boom: there’s dinner.
Ingredients
- 500g shredded frozen spinach (or 400g fresh)
- 500g ricotta cheese
- 500g feta cheese
- 2 tablespoons finely chopped mint
- 6 Large eggs, lightly beaten
- 1 tablespoon semolina
- 1/2 teaspoon pepper
- 6 sheets puff pastry
- 1 Large egg, lightly beaten, extra
Instructions
- Preheat oven to 200C.
- In a bowl, combine the shredded spinach, feta, ricotta, mint, semolina, spinach, pepper, and eggs.
- Take one sheet of puff pastry and cut in half. Take one half and spoon mixture down the centre line. Take the left edge of the pastry and fold it over the mixture. Take the right edge and fold it over the left, making sure to overlap the pastry edges.
- Brush with extra beaten egg, and top with a sprinkle of sesame seeds. Cut each roll into 6 or 8 pieces.
- Bake on middle rack until the pastry is starting to become golden, about 15 mins. Then move the tray to the very top rack for the last 5 mins of cooking time or until crisp and golden. This enhances the crispiness of the pastry.
- Serve with salad of choice.

YUM!! All the yums!!! I’m a pastry gal too- how could anyone not be?!
As for food to eat while watching the movie let’s have some hummus & crackers, a slab of baked feta too, a bit of fried haloumi drizzled with lemon & chilli ( actually, let’s have a shitload of that!), we’ll have some of your little pastries because OF COURSE & let’s finish off with baklava. Throw in a Greek salad if YOU MUST but I’d be happy with any or all of that #guts
And is it just my end or is there no ingredients list?
I’m not in it to win it but thanks for the awesome recipe! Will definitely keep it on hand for when I need lunchbox inspo! x
Loukoumades! Or perhaps some Greek yoghurt and honey frozen for 20ish minutes so it goes a bit ice creamy, then sprinkle with walnuts when ready to eat. Mmm eating.
I’m making this this weekend! You had me at fetta…
Oh my gosh- just the other day my friend (who is Greek and is all about Greek food) was telling me about some kind of giant olive, stuffed with fetta, and then DEEP FRIED!!!!!! I haven’t tried them yet but am dying to. I reckon I could down at least 40 of those during the movie!
I could be very tired but I can’t see the ingredients list. Quantity/weight etc
I would make Greek Pizza from the Enchanted Broccoli Forest Cookbook , its made with filo pastry. I have not made it for a long time, must make it again soon, thanks for reminding me of fabulous Greek food.
Ages ago I stumbled across a recipe for Baklava with honey syrup. It’s the ultimate movie night finger food. I know it’s not a meal in itself, but hey, movie night!!!
These look great (I can’t see the ingredients list either – noticed I was not the only one but could probably guess for this sort of dish). I love the saganaki with figs at Hellenic Republic so I think for movie night I would put these on a pizza and call it dinner! With lots of rocket on the side (because it would look pretty on a pizza but it just falls off and that is no fun spending movie night with a lap full of greens!)
We actually prefer veggie version of a sausage roll than a meaty one and these rolls sound right up my eat street, even though I can’t see the ingredients either. Greek food is one of my favourite cuisines, I can’t go past haloumi anything (and everything!)
Yum – we love a hot lunch during winter and these look perfect. I think I might get onto making a few extra to hide away in the freezer for when baby number three arrives {because there be no hunger like that of a breast feeding Mama}.
Agreed – anything hot wrapped in flaky pastry is my jam. Speaking of, peanut butter and jam filled rolls..yum. I have a massive sweet tooth so I can see myself diving into a sugar high of Kourabiethes.
I think I’d go with my body-weight’s worth of saganaki because you can’t ever go wrong with squeaky, hot cheese. Although these look like an excellent (and somewhat healthier!) alternative!
You know I reckon I could get Boo to eat these. Especially if I said you made them. Might even get my belligerent stomach to accept a little bit if I picked out most of the delicious spinach *sob*… I can almost TASTE THEM. *drools*
Definitely on the pastry and sauce wagon, so good!! Movie watching would be complete with these bite sized veg rolls with a haloumi salad because all the cheese!!! I want this food and a movie tonight please universe.
I couldn’t resist some giant white beans in tomato sauce with some nice crusty bread on the side. I did it in the slow cooker last time and it was so amazing…. A side of dolmades wouldn’t go astray either 😛 And assuming I don’t have to cook them during then movie, loukoumades as dessert (okay and maybe a Greek coffee– for good measure haha)! I have fond memories of making loukoumades out on the porch with my poppy when I was a kid. Needless to say, mine never taste quite as good!
OMYum. Lemony Soup. I haven’t made that in years. Does haloumi count? Do I really need another recipe book haaahaha what a silly question, of corse I do.
I love all Greek food. It really is comfort food for me. Avgolemono is my go to dish to deliver to new mums. But spinach and cheese rolls are a party favourite in our house so they would be my choice for movie night.
Oh yum, I’m loving all the flavours here and isn’t it funny mine (kids) wouldn’t eat spinach on it’s own but when wrapped up in pastry – winner!!! Thanks for sharing with YWF too.
