Lazy Satay Curry

Confession: Sometimes I just don’t have fresh coriander in the house.

I know, its such a foodie fail. But, like most people, I just don’t. Therefore, sometimes I have to come up with things that taste delicious from stuff I find in the house and no fancy ingredients. This here satay is one of them. Sure it’s not like the legitimate stuff from your local Thai takeout, but it’ll do in a pinch, and as a bonus, it’s vegan.

Lazy Satay Curry

Serves 4

Ingredients:

oil
1 onion, diced
1 clove garlic, minced
A few handfuls of whatever vegetables you have (I used capsicum,carrot, mushrooms and beans)
1 tablespoon whatever curry paste you have on hand
1 400g can coconut milk
1/2 cup veggie stock
1/2 cup peanut butter
1 teaspoon sambal oelek or any other chili you might have
1 teaspoon brown sugar
1 teaspoon soy sauce
juice of 1 lime

Directions:

1. Saute the onion in the oil for a few minutes, then add the curry paste. Cook 1 minute.

2. Add everything else and simmer 15-20 minutes.

And there you have it. A pantry dish for lazy nights.

    I just made this for dinner tonight, I used cauliflower, broccoli, capsicum & beans & it was delish! Perfectly paired with a movie then bath- good Saturday night in!

    I looove satay vegies and had been looking for an easy recipe that had lots of flavour.  I made this for tea last night with vegies and tofu, it was delicious!  Thanks for the recipe!

    This was so easy and sooooooo yummy! I only had massaman curry in the cupboard, which went beautifully with the peanut butter. I had no limes, so left that out, and threw in sweet potato, cauliflower, carrot, beans and little desiree potatoes, and served it up with jasmine rice 🙂 Thanks for a fabulous, easy, tasty and vegan recipe – we will definitely be making this often!

    Thanks for the recipe, very yummy! I also made a non-spicey version for the kids (2 and 5 yrs). For them I just added a tiny bit of conventional curry powder instead of Thai curry paste & chilli, chopped the veggies much smaller and they absolutely wolfed it down! 🙂

    Just popping by to say I’ve been googling & making this recipe for YEARS now, it’s a firm favourite with family and friends and I’ve changed up the additions ie different veg, sometimes quorn, sometimes chicken (if it’s for the meat eaters) and it always turns out a little bit differently but always perfect. Thank you, and please keep it on the blog forever!

      I cannot tell you how much this has made my day! I always cringe when I think of people finding this recipe – it’s a great recipe but the photo is so bad! I wrote it so long ago haha.
