Another delicious recipe from Jamie Oliver’s Ministry of Food challenge I’m undertaking. This is from the “Delish Veg” section, and ohmigoodness, these recipes really are delish. As much as it hurts me to say that. (Not a fan of abbreviated words).
Meanwhile, as you’re drooling over this recipe, rest assured you’ll see many more like it, the veg section is unbelievable.
Boil 4 cobs of corn or 3 cups frozen kernels 8-10 minutes with the lid on.
When tender, drain in a colander.
Halve, deseed and finely chop 1 fresh red chilli.
Place a little knob of butter on each cob and brush over to coat.
Sprinkle over 80g parmesan cheese and the chilli, making sure it sticks to the outside of the cobs. Or mix in with the kernels.
Season with salt and pepper and serve with lime wedges.
