Meatless Monday – contributor favourites!

Undoubtedly, the BEST part of this Meatless Monday link is seeing what y’all have come up with. I never fail to be inspired, and am often found pinning them to try later. So I thought I’d share with you some of the ones that have caught my eye over the last few months. I hope to do this every once in a while.

This is the 82nd Meatless Monday link up, which blows my mind. That’s 82 weeks of glorious meatless recipes shared! I can’t wait to dig back to the start and find the ones I wanted to try but forgot about. I feel a whole new world on my culinary horizon, haha.

But for now, here are the three that have stood out recently:

mm veggie frittata Bek at Just for Daisy can make me this veggie frittata anytime. Like, right now in fact!

It is FREEZING here lately, and I am desperate for this amazing slow-cooker lentil soup from Modern Day Mummying.
mm spanakopita

I have pinned just about all of Lisa’s recipes from Greek Vegetarian! Including this delightful spanakopita.

    I love all Lisa from Greek Vegetarian’s contributions. Mediterranean food is my favorite food to eat and she always has such fabulous photographs.

    Hi Veggie Mama! My ‘manly’ man loves the warm winter roast veg salad that I make. You just roast whatever veggies you’ve got – pumpkin, sweet potato, quartered roma tomatoes, thickly sliced mushrooms, zucchini etc. with garlic, olive oil and herbs eg. rosemary/thyme. Serve on a bed of spinach or rocket, crumble some feta and sprinkle on some pumpkin seeds.

    Yum I made a frittata last week and amazed myself on how darn good i it was .4 eggs a little bit of lactose free milk,some grated zuccuni ,orange and red small capsicums cut up and baby spinach leaves ,and parsley chucked in and salt and pepper and cook in the oven for about 15-20 mins I nearly devoured the lot on my own it was that yum!
