Vegetarian Schnitzel with Cranberry and Camembert

This was a huge, huge hit here at Casa de Veggie Mama.
I have long been a fan of cranberry and either camembert or brie. Or even back in my turkey-eatin’ days, with cream cheese. I’ve been meaning to make something like this for the longest. time. everrrrr.
I egg-and-breadcrumbed Sanitarium soy fillets, and baked them in a hot oven. You can use anything you damn well please – breadcrumb your own invention (I think eggplant would be divine) or use a ready-made schnitzel-type thingy. Smear on some cranberry sauce straight out the jar and layer a good-sized slice of camembert on top. Put back in the still-hot oven to melt and ooze and drip deliciousness all over your crispy schnitzel. YUM.
I served mine with garlic mash, roasted mushrooms, corn and broccoli. We fancy fancy here.

    Never tried soy meat substitutes, not sure about them. Love the combo though and think it would be great with eggplant as you suggest!

    They're very good for upping my iron content in a hurry. Not all are created equal and some are downright awful… but I like the variety it affords.
