I broke my “no-oven-in-summer” rule because it was raining and the humidity, for once, wasn’t killing me.
I made this ridiculous concoction (actually I made two of them) and sorta felt really guilty so had steamed veg on the side.
How cute would these be for dinner parties? I mean seriously… and who doesn’t love dinner party dinners that take care of themselves in the oven?
I love giving dinner parties. Well, I would if I had more than one good, unbroken chair at my table. True story. It’s old, given to us by a very old lady and all but one of the chairs have bowed out in the years since. In fact, they looked like they’d bowed out before we even took possession of them. Rickety, barely-held-together… but really cute. and I sat on one at about 32 weeks pregnant and it collapsed underneath me. I tweeted “fatty broke a chair!” after I recovered from killing myself laughing.
So one day when I buy some new chairs (almost 7 years later, I’m still to get around to that), I’ll invite you over for these potatoes. Wanna come?
Ingredients (to make 4 small-ish ramekins)
4-5 small, washed white potatoes, sliced thin
2 cloves garlic, diced
4 tablespoons butter
8 tablespoons cream
1. Preheat oven to 200C
2. Layer potatoes with garlic, bits of butter, parmesan, salt and pepper.
3. Grate parmesan over the top
3. Pour 2 tablespoons cream over each ramekin.
4. Bake with lids (or foil) on 20 minutes until mostly cooked through. Cook 10 minutes with lids off to brown tops. You can turn up the heat for this, or put them under the grill/broiler for a bit.
5. Try not to feel guilty.
