Quick Sweet Chilli Tofu and Rice

Sweet chilli tofu and rice recipe | Veggie Mama

This is one of my favourite lunches, and if you’ve got leftovers in your fridge then it’s one of the quickest, too.

I generally have some cooked brown rice or quinoa, and a slab or two of tofu hidden around somewhere. This sweet chilli tofu and rice situation really is only limited by your imagination, but I tend to put it together like a fried rice, only without the frying!

Quick Sweet Chilli Tofu and Rice

  • Pop some frozen peas and carrots in with your rice as you reheat it (sometimes I even use the rice cold, like a salad) – you can either use a microwave or in a steamer, and add some chopped mushrooms, some cucumber and capsicum – whatever you like, or have on hand.
  • Then grill a piece of marinated tofu, chop it up and add to the bowl. You can even use a sandwich press here, saves so much hassle!
  • Shake over a little soy sauce and sweet chilli sauce
  • Serve sprinkled with some chopped green onion, coriander, and sesame seeds if you have any. Bonus points for toasting them!

It’s also pretty good packed in advance and taken in a lunch box.

When I was a busy newspaper editor I loved to get a little packet of instant rice, and one of microwaveable steamed veggies, and put all that together with some cold chopped marinated tofu. I kept soy sauce and sweet chilli at work and voila – a non-boring hot lunch! Lord knows, I needed that. Office lunches can get depressing.

    I want this for lunch today!
    I was lazy and didn’t cook last night so I don’t have any yummy leftovers to look forward to for lunch…always makes for a long day!

    Looks very yummy! I usually do a similar thing the day after we have Mexican.. Rice, corn, salsa, avo, sour cream and leftover marinated chicken.. Not veggo but DELISH for us meat eaters. All this food talk is reminding me that I probably should find myself some lunch sooner rather than later…

    I have never eaten tofu but after seeing this recipe… I may have to try it. I never even thought to microwave vegies and use left over rice to make this for lunch. What a great idea!
