Which you can totally make in advance and I totally recommend you do. So easy to just grab and go on busy days.

Just so easy, and perfect for when you want something a little bit different from steamed or boiled.
You could absolutely swap out the autumn veg for summery ones (it’s amazing in peach season) and have yourself a merry little dessert.
I cannot tell you how much I love this veggie twist on a traditional fish pie. I think it’s the mash. Gotta be.

Everybody’s favourite, and a VM Gang special. Extra good with summery veg – the ripe, juicy tomatoes make all the difference.
You’ll want a tub of these caramelised onions at all times. I also have them as the base in my caramelised onion and goat cheese quiche – which is THE BEST.
With jalapenos! It’s such a delicious way of serving a much-maligned veg.
Another VM fave, you won’t know how you lived without them so long.

Cheesy mash with kale and spring onions (and loads of organic butter), I want to marry you.
You could do it with any sweet potato, really – but the purple is so festive!
Cauliflower has never been so un-boring!
