1 cup Self-raising flour ((or use a mix of wholemeal and white SR flour))
1 Apple (peeled, cored and cut into 1cm chunks)
1/2 cup pecans (chopped fine)
1 egg (lightly beaten)
1/4 cup milk (or more if the batter seems too thick)
1/2 cup apple juice
Mix flour, apples, pecans, egg, apple juice and milk. Add a little more milk if it is not the consistency you like.
Drop 1/4 cupful of batter into the pan. Fry a few minutes on either side in a pan set to medium-high. Continue to check the temperature, as sometimes you'll have to turn it down so the pikelets don't get overbrown on that first side.
Serve hot - I used butter and golden syrup but it's up to you!
