Roasted Cauliflower and Brown Rice Salad with Dukkah

Cauliflower-and-rice-salad

A little while ago, my lovely friend Ruth from Gourmet Girlfriend started a fun idea – the Clever Clogs Cooking Club. Signing up to the club means you get a special gourmet goodie in the mail every month, and a cool newsletter to go with it. Even better, you get an exclusive recipe card with ideas of how you might like to use the item. I signed up straight away and last month was super-stoked to find a beautiful dukkah in my mailbox, which I ate straight up with some good olive oil and bread I’d just made. DE-FRIGGING-LICIOUS.

I also made the roasted cauliflower salad that was the recipe for that month, only I didn’t have freekeh so substituted with some brown rice I’d already had. Sprinkled with an epic amount of dukkah, I single-handedly ate the lot. Sorry, guys.

You too can make the gorgeous recipe with Ruth’s dukkah recipe here. Then mix it up with some roasted cauliflower, 1 cup of cooked brown rice, parsley, juice of 1-2 lemons, and some olive oil to dress. Don’t forget the salt and pepper!
