It’s so hilarious to think of how much I would have loathed the idea of this dish as a kid. I mean, the cheese sauce and pasta, all good – but roasted tomatoes and spinach? Bleurgh.
Well, I’ve come a long way, baby! It’s a rare day indeed I don’t have a packet of frozen spinach in the freezer for emergencies, and it’s one of the plants I have constantly in the garden (although my garden is a SHAMBLES right now thanks to all the rain we had a while back). I feel weird buying fresh spinach when it’s so easy to grow. Having said that, there is a bag in my fridge right now! I can’t really be without it, and my garden hates me.
I like to make this sort of dish for nights when either Matt is at training or the girls are taking a while to go to bed – It can sit happily in the oven for a bit until we can get to it and it makes great leftovers. I put the tomatoes in the hot oven to roast while I’m cooking the pasta and making the sauce, and then it all goes in together with the temperature down until we’re ready to eat. Then I crank up the grill and brown the top so the cheese goes golden and bubbly. Aw yeah.
