Super-healthy ANZAC biscuits

Ohhhh you are going to be so happy you came here looking for super-healthy ANZAC biscuits! Ding ding ding, we have a winner!

I don’t normally ever mess with the ANZAC biscuit. I like it traditional, full of golden syrup goodness. I still can’t make up my mind whether I like them chewy or crunchy though. Probably a bit of both is my best bet! The humble biscuit has such a long history, and I for one am grateful that they exist. Honestly, one of my favourite (if not total favourite!) biscuits of all time.

I use the same recipe my mum does, which I guess has been handed down to her from her mum. It is the same recipes I find in a lot of my vintage cookbooks. I love the story behind them and the fierceness with which they’re protected (it’s the only time I will call something a biscuit, as cookie is American and these are proudly Aussie!) But a little while ago I was reading the Natural New Age Mum blog and she had turned the oaty wonders into a nutrition powerhouse of healthy ANZAC biscuits. I couldn’t resist – I had to make them! And they scrub up pretty well, too.

I’m still going to make the traditional ones, but for those watching what they eat, this is an excellent alternative. They taste just the way they should!

And spare a thought today for those who fought for us. The day reminds me to be grateful for so many things.

    It was the Women’s Weekly version here. Made with two three year olds. You should have seen the bench afterwards. And the floor. But all that golden syrup and brown sugar was tasty as.

    I am going to experiment today with coconut sugar and fresh orange juice…I suppose as I didn’t grow up with Anzac biscuits, I don’t mind a bit of a break with tradition.
    I will let you know how they go!

    These look surprising nice, despite my love of chewy, golden syrupy Anzac-ey goodness! I bet the almond meal would make them really lovely. Nice recipe!
    I made good old-fashioned Anzac biscuits today, but I’m slightly regretting all that butter and sugar!
