I don’t normally ever mess with the ANZAC biscuit. I like it traditional, full of golden syrup goodness. I still can’t make up my mind whether I like them chewy or crunchy though. Probably a bit of both is my best bet!
I use the same recipe my mum does, which I guess has been handed down to her from her mum. It is the same recipes I find in a lot of my vintage cookbooks. I love the story behind them and the fierceness with which they’re protected (it’s the only time I will call something a biscuit, as cookie is American and these are proudly Aussie!) But a little while ago I was reading the Natural New Age Mum blog and she had turned the oaty wonders into a nutrition powerhouse. I couldn’t resist – I had to make them! And they scrub up pretty well, too.
I’m still going to make the traditional ones, but for those watching what they eat, this is an excellent alternative. They taste just the way they should!
