Sweet potato and red lentil bisque – an Oprah recipe

Sometimes there’s that rare moment when you read a recipe and realise you have all of the ingredients ready to go. Flipping through the O Magazine recipe book I picked up on my trip to DC, I came across this gorgeous soup and knew I needed to make it for dinner. As I was alone I was seriously considering vegemite toast, but this looked so healthy and delicious and would be awesome for lunch the next day.

I love anything with coconut milk, and everything is blended so there’s no scary lentil bits or anything. Just a lovely velvety soup with a slightly sweet flavour. Excellent for some of the cool nights we’ve been having. Crusty bread with lots of butter wouldn’t go astray…

You can find the recipe here. I’ve not taken nearly as gorgeous a photo as they have (and I also had no pomegranate), but you get the idea!

    That looks so good, and is quite similar to my Sweet potato and red lentil curry (

    Oh the texture was almost the best thing about it! I love any veggie soup with curry and coconut milk… divine.
