Popped this one in the slow cooker recently and felt smug AF. It’s delicious, cheap, easy, and a real crowd-pleaser.

Veered from my usual straight-potato topping to add a little sweet potato for extra goodness. So great for this cooler weather.
I made cute little individual serves but you can definitely whack it all in together.
Whipped this up for lunch one day and have been hooked ever since. So easy – just roast your halved eggplant, then top with your usual parmigiana toppings and whack under the grill. Side salad – boom. Quick, healthy and delicioso lunch.
A riff on my usual corn chowder, this is HEARTY.
I’ve been wanting to make this for so long and when the winter weather hit, I got stuck straight in.
Do get yourself a gruyere for the cheesy topping, it makes all the difference.
